Naturally, as it is October I have been on the hunt for some Low Carb treats that involve this months star...pumpkin!
Pumpkin Pie is literally one of my favorite pies and I was leery trying out these muffins because I assumed they would taste like crap lol. Just being honest!
Well I was pleasantly surprised at how delicious (like pumpkin pie) they were! Plus they are soooo easy to make and involve no hard to find tricky ingredients like most low carb desserts!

Ingredients:
-2 80z Philadelphia Cream Cheese
-1/2 cup sweetener (your preference..lots of people like Swerve)
-2 eggs
-1/2 cup pumpkin puree
-1 tablespoon pumpkin pie spice
-1/2 teaspoon vanilla
Recipe:
1. Preheat oven to 350.
2. Soften the cream cheese in the microwave (or let it sit out on the counter for a few minutes)
3. Add all other ingredients to cream cheese and mix on medium/high until completely smooth.
4. Grease 14 muffins tins (or use muffin wrappers) and fill eat with equal parts batter.
(Obviously I have a 12 muffin pan so the remainder of my batter I poured into mini muffin pans for little "poppable" pumpkin bites for the girls)
5. Bake 18-20 minutes
6. Serve warm or cold (we liked cold) with a dollop of whip cream and some sprinkled pumpkin pie spice on top
