5 Weeknight Low Carb Dinners

This morning after asking if anyone was interested in some low carb dinners my phone never stopped binging! It seems we all would like to lose a few lbs/inches with some easy weeknight dinners! 

I'm choosing to share this weeks actual meals with you...above is the result of my trip to Publix this morning.  I have been eating low carb (on and off) since around 2011 and if you stick to it it WORKS. Like crazy.  I love it because within a week you feel and see a difference!  You can use the search bar on the top of my blog page to find low carb dinners I have shared in the past as well.  One I'm making this week is actually an oldie but goodie (Mushroom Pizzas).

Okay to begin I am not an expert and I am not a dietitian. I'm just a mom who likes carbs but also likes wearing swimsuits.  


Monday Dinner Plan.  
BLT

Tonight I am going to be making BLTS...these sound sorta ehh but we have brought these along on picnics and boat trips and are actually quite good. You honestly don't even miss the bread!

Romaine Lettuce (This will serve as the bread)
-Sliced tomatoes
-Mayo
-Bacon (If you are doing a full blown keto diet they suggest always using real bacon.  (If you want to use turkey bacon be my guest)
-Pepper

Make these as you would a regular BLT!( I have also seen people slice the tomato thicker and use two pieces as the buns. )

Served tonight! I had three each with two pieces of bacon!

Portobello Mushroom Pizzas

I have shared these little mushroom pizzas before (see link below for recipe) however recently I have changed them up a bit.  Instead of buying lots of medium/small mushrooms I have bought the large mushroom caps.  You can really fill those bad boys up and after eating just two you feel pretty satisfied.

Shrimp & Sausage

This looks pretty amazing! All the ingredients are easy to find and it doesn't take long to prepare at all!  We love shrimp over here and sausage so I'm sure this will be a winner.  I have combined the two before but I like how this recipe adds in some other twists like the chicken stock!  I bet this dish is FULL of flavor! 



Friday Dinner Plan.
Sausage and Veggie Casserole

I'm not going to lie..I tend to make this dish weekly.  It is just so good! 
Ingredients:
-sausage (beef pre-cooked)
-asparagus
-mushrooms
-tomato
-broccoli
-olive oil
-seasoning (I like to use oregano, basil, salt, pepper)

I slice the sausages very thin and chop up all the veggies.  Drop everything in a 8x10 pyrex and drizzle with olive oil and seasonings.  Mix it all up and pop it in the oven at 350 degrees for around 45 minutes,  Depending on how long you want to cook you can also cover with foil.  I usually pull mine out when the sausage starts to crisp on the edges,  You can honestly alter this recipe with whatever you want.  I have fresh cilantro and parsley this week so I bet one of those will end up in it!

As far as snacking I usually go for cheese.  There are some awesome cheese crisp recipes online that we make in the evening if we want a snack.  Also berries are okay when it comes to fruit so I buy rasberries and strawberries each week.

I know I'm making sausage twice this week but oh well. We like it more than chicken to be honest but I try to at least make chicken one night a week.  We also buy the chicken sausages but still I prefer those on the grill.  Next week there might be more seafood on the menu but for this week here ya go! I've been working on a project for the past two weeks and what always seems to be the most challenging part is choosing paint colors.  I have been wanting to find a nice neutral that isn't too "Gray" and isn't too "Beige" but not too white either.
